Vanilla Cream Rice Krispies Treats

It’s been a long time since I made Rice Krispies Treats. I was craving them..so why not make some spring-like ones. Most people know the recipe or at least the basic ingredients, right?! How about we change it a bit. Maybe some of you have seen or have made different versions. Some have peanut butter or chocolate chips or Oreo cookies. Yes…Oreo cookies! Now that’s a thought. But I didn’t go there. Instead…

I was shopping at Target with my twins and planned to buy some Oreo cookies when my little girl instead asks for the Oreo Golden version. I hesitated at first. Hmm…vanilla cream sandwich cookies are one of my favorite cookies. So I bought them. But instead of getting the Oreo brand I bought the Target store-brand. I was being cost conscious even though these treats are already inexpensive. (I currently have a small stockpile of Rice Krispies cereal.)

I modified the original Rice Krispies recipe by using less Rice Krispies cereal (1 cup) and then adding 15 vanilla cream sandwich cookies. It is yummy. But I must warn you the cookies do sweeten the treats a bit…not overpowering but definitely sweeter than regular Rice Krispies treats. You can see the vanilla cream sandwich cookie pieces if you look closely at the picture below.

Vanilla Cream Rice Krispies Treats Recipe (adapted from Cookies & Cream Zebra Treats)
3 tablespoons   butter or margarine, divided 
1 package (10 oz. each, about 80) regular marshmallows
5 cups Rice Krispies cereal
15 chocolate with white filling sandwich cookies, finely crushed

Put the 5 cups Rice Krispies cereal in a big bowl. In a separate bowl, fnely crush the cookies. Then pour the crushed cookies into the big bowl of Rice Krispies and mix. The rest of this recipe is well known (but I’ll note it anyways) – In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Rice Krispies and cookie mix. Stir until well coated. Using buttered spatula or wax paper evenly press mixture pan coated with cooking spray. Cool.

Today’s treat is not healthy nor Weight Watcher friendly unlike last week’s muffins. It’s okay to enjoy sugary sweet treats on occasion.

Do you like how I made these Vanilla Cream Rice Krispies Treats into pastel flowers? I used a flower shaped cookie cutter, put a light frosting, stuck a yellow M&M in the middle and topped with “Spring” sprinkles. I love sprinkles and flowers! You know I am wishing for spring to come sooner rather than later.
