I love to bake but it can be tough on the waistline. That is why I love finding recipes that are lower in fat but still taste yummy. Ask me what sweet treats are hard for me to resist? Cakes are at the top of my list! I am happy I found this simple low fat Apple Coffee Cake recipe.
This cake is easy to make because it uses a package cake mix plus a few ingredients. It’s lower in fat because it uses applesauce and does not use oil.
The original recipe is from Food.com. I changed the recipe by using eggs instead of Egg Beaters.
(Low Fat) Apple Coffee Cake Recipe (adapted from recipe called Weight Watchers Apple Swirl Cake on Food.com)
1/4 cup sugar
2 teaspoons cinnamon
1 (18 ounce) package yellow cake mix (I used Betty Crocker Super Moist Tellow Cake Mix)
1 2/3 cups applesauce
3 large eggs
Heat oven to 350 degrees. Mix sugar and cinnamon in a small bowl and set aside. Spray 10 inch tube or bunt pan with non stick spray. I used Pam Baking Spray. Dust pan with the cinnamon sugar mixture. Don’t forget this part. This (in my opinion) is what makes it a coffee cake. The amount of sugar and cinnamon in this recipe will generously coat your pan.
Mix together the cake mix, applesauce and eggs. Pour into pan. Bake 40-45mins.
* For those who do Weighter Watchers – I entered this recipe into their Recipe Builder. If you divide the cake into 16 slices, then a serving equals 5 points. The slice you see in the picture at the top of the post is a serving size.
I really love the taste of this Apple Coffee Cake. I think my family of 5 agrees. They may have liked it too much or I should say too fast. Only two slices were left 20 hours after I made it. Evidence in picture below.
And then it was all gone one hour after that. My husband said to make two cakes next time.
Note: One must have portion control to still consider it “low fat” eating 😉
