Lately, I’ve been cooking most Sunday dinners using a slow cooker. It’s makes dinner prep easy and my Sundays are more relaxing. Here is one meal I recently made for my family.
My sister-in-law told me about this recipe several years ago. I usually cook it with ground turkey in a pan. My husband likes to call this meal – whimpies. My family loves the taste of the sauce so I wanted to try it with pulled chicken in the crock pot.
The results were delicious. I love making meals using my slow cooker.
NOTE: This is a recipe where I do not have exact measurements for all ingredients – as in the references for a shake and a dash.
Slow Cooker Pulled Chicken Sandwiches Recipe
- Chicken breast – about 4-5 I used a value/club pack of chicken split breasts (with bones and skin). *The bones and skin were removed before placing in slow cooker.
- 1 1/2 cup ketchup
- 1/3 cup brown sugar
- 2 tablespoon lemon juice
- 4 shakes of soy sauce or Worcestershire sauce
- 1 1/2 tablespoon mustard
- dash of salt
- 1 – 2 shakes of garlic powder
- 1 – 2 shakes of onion powder
Place 1 cup of water and then chicken in slow cooker. In a separate bowl, mix ketchup, brown sugar, mustard, lemon juice, soy sauce (or Worcestershire sauce), salt, garlic and onion. Pour mixture over chicken. Cover slow cooker with lid and cook on low for about 3 -5 hrs (when chicken can be easily pulled apart). Take chicken out of slow cooker and pull/shred chicken breasts apart using 2 forks. Stir chicken back into the slow cooker juices. Cover and cook on low for another 30 minutes to 1 hour.
To serve, place a scoop of pulled chicken on a sandwich roll or hamburger bun.
